Fennel Shorbat – A Nourishing Middle Eastern Lentil Soup

Ingredients:

  • 1 cup red lentils, washed

  • 1 onion, chopped

  • 2 carrots, cut into small cubes

  • 1 celery stalk, cut into small cubes

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon turmeric

  • 1 liter chicken or vegetable broth

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1 tablespoon lemon juice

  • Fresh parsley leaves for garnish


How to Make It:

  1. Sauté the aromatics
    Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent and fragrant.

  6. Finish and serve
    Stir in lemon juice, season with salt and pepper to taste, and garnish with fresh parsley.
