Ingredients:
1 cup red lentils, washed
1 onion, chopped
2 cloves garlic, finely chopped
2 carrots, cut into small cubes
1 celery stalk, cut into small cubes
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon turmeric
1 liter chicken or vegetable broth
2 tablespoons olive oil
Salt and pepper to taste
1 tablespoon lemon juice
Fresh parsley leaves for garnish
How to Make It:
Sauté the aromatics
Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent and fragrant.Build the flavor

Add the red lentils and broth. Bring to a gentle boil, then reduce heat and simmer for 25–30 minutes until the lentils are soft and fully cooked.Blend or leave rustic
You can use an immersion blender for a smooth texture, or leave it chunky for a heartier soup.Finish and serve
Stir in lemon juice, season with salt and pepper to taste, and garnish with fresh parsley.
